Brewing beer with encapsulated yeast

 

Most of our research is dedicated to the encapsulation of mammalian cells for the formation of organoids and model 3D tissues. In this project, we are investigating the growth of yeast within alginate capsules and their impact in wort fermentation. On the one hand, we are optimizing the formulation of the capsules in terms of stability and mechanical resistance to yeast growth-induced pressure and reutilization. On the other hand, we are assessing the chemical and sensory profiles by comparison with classical methods.
